The Nest Recipe: Irish Fruit Cake
Round cake tin - lined with baking paper
In a saucepan put:
6oz/175g Butter
4oz/100g Granulated sugar
12oz/350g mixed dried fruit
1 Tablespoon Marmalade
1 tea cup/ 200ml Milk
Melt slowly until fruit swells, but take care NEVER BOIL. Stir well and allow to cool.
Now add:
8oz/225g plain flour
1 egg, beaten
1/2 teaspoon mixed spice
1/2 teaspoon bicarbonate of soda
1/2 teaspoon almond essence
Stir well and put in a pre heated oven at 150˚C for 2 hours.
Check at 1 hour 45 and test with a skewer, when baked take out and let cool IN THE TIN.
Simply sprinkle with granulated sugar or for high days and holidays cover top with marzipan and decorate...with mini eggs for Easter...
Store wrapped in grease proof paper in a cake tin.
